Ingredients
VINAIGRETTE

extra virgin olive oil

champagne vinegar

SALAD
One
5 ounce package
mixed salad greens

medium
grapefruits,
peeled and sectioned

D'Anjou pear,
sliced

cup
crumbled feta cheese
Instructions
Prepare the dressing:
Add all ingredients into a blender and puree until smooth and emulsified.
Assemble the salad:
Layer salad greens, pears, and grapefruit, then sprinkle with feta cheese. Top with dressing and serve.
Notes
The recipe makes more vinaigrette than you'll need for this salad, so save the rest for another day!
