Ingredients
PINEAPPLE SALSA:
1cupminced fresh pineapple
1/2largesweet onion,minced
1/2largeyellow bell pepper,seeded and minced
1/2largegreen bell pepper,seeded and minced
1/4cupminced fresh cilantro
FISH:
3mediumlimes,juiced
1tablespoonvegetable or canola oil
1½poundsred snapper filets,cut into 4 servings
salt and pepper
Instructions
PREPARE THE SALSA:
In a bowl, combine the pineapple, onion, bell pepper and cilantro. Cover and chill.
PREP THE FISH:
In a small bowl, combine the lime juice and the oil. Set aside. Salt and pepper the fish.
Heat and oil your grill. Grill the snapper for approximately 4 to 8 minutes on each side, basting with the lime juice mixture. The fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.
Notes
You can add in some minced red bell pepper too, if you'd like.
If you are following the Paleo diet, use avocado oil or olive oil in place of the vegetable oil.
