6largebaking potatoes (Russet),washed and cut into 2-inch chunks
1½poundssmoked sausage,thinly sliced
Preheat the oven to 375°F.
Pour water into a roasting pan. Add the vinegar. Sprinkle paprika and sugar over the water; mix to remove the lumps. Add the salt, pepper, onion, tomato, parsley, potatoes and sausage. Toss and mix well.
Bake, uncovered, for 1½ to 2 hours. Stir a few times while cooking.
Whole Foods actually sells Portuguese smoked sausage, which is what I used for this recipe. If you can't find it, go ahead and use any kind of smoked sausage.
