Easy Swiss Cheese Chicken is made with seasoned chicken breasts topped with Swiss cheese, a creamy sauce and buttery Ritz cracker crumbs, then baked until tender and golden.
Preheat the oven to 350℉. Spray a 13×9-inch casserole dish with nonstick spray.
Place the chicken into the prepared baking dish. Sprinkle with the garlic powder, onion powder and salt/pepper. Top each with a slice of Swiss cheese.
In a medium bowl, combine the soup, sour cream and milk. Pour it over the chicken in the pan. Sprinkle the Ritz crumbs over the chicken. Spoon the butter evenly over the cracker crumbs on the chicken.
Bake, uncovered, until a thermometer reaches 165℉., about 30 minutes.
Notes
Chicken size: For even cooking, use chicken breasts that are similar in size and thickness. If they're very thick, pound them to an even thickness or cut them into smaller portions.
Cooking time: Depending on the thickness of the chicken breasts, they may need more than 30 minutes. The chicken is done when the thickest part reaches an internal temperature of 165°F.
Swiss cheese: Deli-sliced Swiss cheese works best and makes it easy to cover each piece of chicken.
Cracker crumbs: About 12 Ritz crackers will give you ⅔ cup crushed crumbs. Don't crush them too finely—a little texture makes for a better topping.
Make ahead: You can assemble the chicken, cheese and sauce several hours ahead and refrigerate. Add the cracker crumbs and melted butter just before baking.
Serving suggestion: Serve with mashed potatoes, rice or egg noodles to take advantage of the creamy sauce.
