This Lime and Cilantro Rice is fluffy, buttery and bursting with fresh lime flavor, making it the perfect side dish for tacos, enchiladas, burrito bowls and grilled meats.
In a medium saucepan, bring the water, salt, bouillon and garlic salt to to a boil. Stir in the rice. Reduce heat to low. Add a lid to the pan, and simmer for 12 to 14 minutes until the rice has absorbed all of the liquid.
Pull the rice from heat and add the butter; let it melt and stir. Then stir in the cilantro, lime juice and lime zest.
Notes
Fresh lime juice and lime zest provide the best flavor; bottled juice is not recommended.
Fluff the rice with a fork before stirring in the butter, cilantro and lime.
For a stronger cilantro flavor, add an extra tablespoon or two before serving.
Leftover rice can be refrigerated for up to 4 days.
To reheat, add a splash of water before microwaving to restore moisture.
This rice is excellent served with tacos, enchiladas, fajitas, grilled chicken or shrimp.
