Susie’s Breakfast Potatoes

SUSIE’S BREAKFAST POTATOES

½ cup butter
1 can reduced fat cream of chicken soup
3 Tbs chopped yellow onion
1 pint reduced fat sour cream
½ cup sharp cheddar cheese, grated
½ tsp salt
½ tsp pepper
6-8 medium potatoes
½ cup corn flake crumbs

1. Boil potatoes 20 minutes. Leave skin on to cook, then peel off skin after boiling.

2. Grate potatoes into 13×9″ glass pan.

3. Mix all other ingredients in saucepan until melted, and pour over grated potatoes. Top with corn flake crumbs.

4. Bake in 350 degree oven for 45-60 minutes, until hot and bubbly.
