Feta Cheese Foldovers

These are so easy to make, and they're very good- quite a hit at my holiday party. I made them with goat cheese instead of feta because that's what I had and it worked great! They puffed up golden and beautiful.
Ingredients:
8 ounces feta or goat cheese, crumbled
3 Tablespoons finely chopped green onions
1 large egg, lightly beaten
1 (17.3 ounce) package frozen puff pastry, thawed and rolled out a little to smooth
1 large egg yolk, beaten with 1 teaspoon waterDirections:
1. Preheat oven to 375°F.
2. In a small bowl, blend feta, onions and egg. Cut pastry into twelve 3-inch squares. Place a mounded Tablespoon of feta mixture in the center of each square. Moisten edges with water and fold pastry over filling to form a triangle. Firmly press edges together with a fork to seal. Lightly brush pastries with the egg yolk mixture. Place pastries on a baking sheet.
3. Bake 20 minutes or until golden brown. Serve warm or at room temperature.
