Sweet and Spicy Pork Tenderloin


¼ cup soy sauce
¼ cup packed brown sugar
3 Tbs sherry
1½ tsp onion powder
1 tsp ground cinnamon
2 Tbs olive oil
½ tsp garlic powder
1½ lbs pork tenderloin

1. In a large ziploc baggie, mix soy sauce, sugar, sherry, onion powder, cinnamon, olive oil and garlic powder. Swish around to mix. Add pork and seal bag. Refrigerate at least 6 hours, or overnight.

2. Preheat oven to 400 degrees F. Reserve marinade, and bake tenderloin approx. 35 minutes, or until meat thermometer registers 160° F. Slice into medallions.

3. Heat marinade to boiling and serve on the side as a sauce for the pork.

Servings: 4

Cooking Tips
*The tenderloin may also be grilled. Place tenderloins on oiled grill and cook 20 minutes, or to desired doneness.

    This is my kind of recipe…easy and delicious. The left over marinate made a wonderful sauce, even tried it on our mashed potatos..yum! My guest from California never wants to leave.
