It all started with my grandmother. Every time I visited her, she whipped up meals and treats she learned to make growing up in her Swedish household. I remember her fig cookies (which I was not a fan of!) and I remember these Denver sandwiches—always welcome in my tummy. Grandma made them with plenty of butter and plain white bread. No ketchup allowed.
After Grandma was gone, my dad took over making Denver sandwiches. He switched things up a little. He used sweet egg bread instead of white bread—and he added ketchup. Since I remember his version best (and liked it better!), I’m giving Dad full credit here.

Add another ½ tablespoon butter, flip, and toast the other side. Remove to a plate and repeat with the remaining slices.
- Make the Denver Scramble: Melt 1 tablespoon butter in the same pan. Add ham, bell pepper, and onion. Sauté for a couple of minutes until softened. Pour in the egg mixture and sprinkle cheese on top. Season with salt and pepper. Let the eggs set slightly, then gently scramble until cooked through but still tender.

Assemble
Divide the Denver mixture between two slices of toasted bread. Add ketchup if desired. Top with remaining slices, slice in half, and serve warm.
