Honey Cake
This delicious cake is baked in a loaf pan and is perfect for dessert topped with fresh berries or even for a sweet breakfast treat!

Ingredients
- 1 cup granulated sugar
- 3 cups all purpose flour
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup honey
- 1 cup brewed black coffee
- ¾ cup safflower oil
- 1 teaspoon vanilla extract
- 3 large eggs
Instructions
- Preheat your oven to 350 degrees F. Grease and flour one loaf pan.
- In a medium bowl, sift together sugar, flour, baking powder, baking soda, salt and cinnamon.
- Combine remaining ingredients in large bowl and mix with hand beater. Add dry ingredients a little at a time until well combined.
- Pour batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted in center comes out clean.
- Cool on a rack, then remove from pan. Slice and serve.
