How to Make Marry Me Quiche

  1. Prepare the pan. Preheat the oven to 350°F and lightly coat a 9-inch pie pan with nonstick spray.
  2. Cook the vegetables. Heat the sun-dried tomato oil in a large skillet. Add the shallots and cook until softened. Stir in the garlic, oregano and sun-dried tomatoes and cook for another minute.
  3. Add the spinach and continue cooking and stirring until it has wilted. Remove the skillet from the heat and let the mixture cool for a few minutes.
  4. Make the egg mixture. In a large bowl, whisk together the eggs, half-and-half, milk, spicy brown mustard, salt and pepper. Fold in the cooled spinach mixture and most of the crumbled goat cheese, reserving some cheese for the top.
  5. Bake. Pour the mixture into the prepared pie pan and sprinkle the remaining goat cheese over the top. Bake for 35 to 40 minutes, or until the quiche is set and lightly browned around the edges. If the top begins browning too quickly, loosely cover it with a piece of foil.

Let the quiche cool for a few minutes before slicing.

How Do You Know When a Crustless Quiche Is Done?

The edges should look set and lightly browned, while the center should be just set. If you gently move the pie plate, you don’t want to see liquid egg moving around in the center.

Try not to overbake the quiche. Eggs continue cooking a little after they’re removed from the oven, so you can take it out when the very center still has the slightest jiggle.

Let it rest for about 5 to 10 minutes before slicing. This gives the filling time to finish setting and makes it easier to cut into neat wedges.

  • Use the sun-dried tomato oil. It’s packed with flavor and makes a great cooking oil for the shallots and vegetables.
  • Cool the spinach mixture slightly. You don’t want to add a piping-hot vegetable mixture directly to the eggs.
  • Don’t worry about the spinach. Five ounces looks like an enormous amount at first, but it wilts down quickly.
  • Reserve some goat cheese for the top. Those little pockets of browned goat cheese make the finished quiche especially pretty.
  • Watch the browning. If your quiche is getting too brown before the center is set, loosely tent it with foil for the remainder of the baking time.

Can You Make Quiche Ahead of Time?

Can I Substitute Another Cheese?

Yes. Goat cheese gives this Marry Me Quiche its distinctive creamy, tangy flavor, but you can substitute another cheese if goat cheese isn’t your favorite.

Feta would be our first choice. It pairs beautifully with spinach and sun-dried tomatoes, although it won’t melt quite as creamily as goat cheese.

You could also try shredded Gruyère, fontina or mozzarella. Parmesan would be delicious too, especially combined with one of the other cheeses.

Can I Add a Crust?

Yes! Although this recipe is designed to be a crustless quiche, you can certainly bake it in a pie crust.

Use a 9-inch unbaked pie crust fitted into your pie plate. Because adding a crust changes the baking process, I’d recommend partially baking the crust first so the bottom doesn’t become soggy.

Keep in mind that you may not be able to fit quite as much filling into the pan once the crust is added.

  • Sun-dried tomatoes: Use oil-packed sun-dried tomatoes and reserve some of the flavorful oil for sautéing the vegetables.
