Summer fair season is approaching. As in “state” fair, or “city” fair, or “small town” fair. Whatever kind of fair you have access to (and I hope you have one), you’re likely to see a whole lot of bizarre foods sold on a stick. Our local San Diego County fair always has its share of stick foods. I’m not sure how they do it, but I spied deep fried butter on a stick last year. I think I’ll stay conservative and go with corn dogs, or Smores, or anything else featured in Matt Armendariz’ new book: On a Stick.
In honor of this fun, new cookbook, I’ve put a Strawberry Trifle on a stick. It’s a simple-to-assemble recipe, and it’s perfect and colorful for summer. The short skewer alternates mint leaves, strawberries and chunks of angel food cake, and it’s served alongside a sweetened cream cheese whipped cream.
There it is- all assembled! Kids can help with this- it’s easy and fun and safe.
Some details: I purchased some fabulous mid-sized skewers at World Market. Use strawberries that are bite-sized. Leave mint leaves out if you’d like. And if you’re making these for Memorial Day or July 4th, go ahead and sprinkle some blueberries in and around your platter to make it red, white and blue.

Strawberry Trifle on a Stick
Recipe Details
Ingredients
- 20 mid sized skewers
- 40 medium mint leaves
- 40 bite sized chunks of pound cake or angel food cake
- 40 bite sized strawberries, tops cut off
- One 8 ounce tub whipped cream cheese
- ½ cup powdered sugar, sifted
- 1 cup heavy whipping cream, whipped
Instructions
- Assemble skewers: String mint leaf, cake cube, strawberry, another mint leaf, and then another cake cube. You can also alternate and put two strawberries and one cake cube on some of the skewers, if you'd like.
- Prepare whipped cream: In a medium bowl, whisk together cream cheese and powdered sugar. Fold in whipped cream.
- Serve Trifle Skewers on a platter along with a bowl of the sweetened whipped cream.

these recipes look great cant wait to try them. I don’t know if I want to try the smores on a stick or the strawberries and angle food cake. They both look delicious. maybe I can find some good beach recipes for the summer instead of just sandwiches.

How fun! My pickiest eater says food tastes better on a stick, so this would be perfect for us. I think he says it because I’m not very creative with putting food on a stick (and refuse to do corndogs lol), but this book would get around that for me.

i’ve eaten a deep fried scorpion on a stick on a trip in China!
The only thing which I deem as different that I’ve tried on a stick is mac and cheese! It was good and decadent but definitely something I wouldn’t eat on a regular basis! Now give me desserts on a stick and I’ll eat them all!!!
As much as I like food you’d think I’d have eaten lots of yummies on a stick but I’ve not eaten anything unusual. But hopefully when I get this book it will open up a new world for me

The only unusual thing I could think of that I’ve eaten on a stick is takoyaki (Japanese street food – contains octopus and other ingredients formed in a ball, on a stick) Although it’s not weird to me since I’m familiar with Japanese food, a lot of others might find it strange.
I had a breakfast sausage wrapped in pancake on a stick. Otherwise just standard corndogs or chili cheese corndogs on a stick 🙂 Thank you for hosting this giveaway. The cookbook looks like a hoot.

most of my “stick eating” has been kabobs, so not all that unusual. On my first trip to Japan, though, I thought I had been pretty adventurous in my eating until my seatmate on the airplane ride home told me he had eaten sparrow on a stick 🙁
