BLUE CHEESE & BACON POTATO SALAD

3 lbs new potatoes, peeled
1/3 cup dry white wine
1/3 cup chicken broth
1/3 cup minced fresh parsley
1/3 cup sliced scallions
8 ounces crumbled blue cheese
¾ cup Italian vinaigrette dressing
¼ lb bacon, cooked, drained & crumbled
salt and pepper to taste
1. Steam new potatoes in large steamer basket over boiling water until tender. Let them cool slightly, and quarter them.
2. In a large bowl, combine warm potatoes with wine, chicken broth, parsley and scallions, tossing mixture gently. Let cool.
3. Add blue cheese and vinaigrette. Toss mixture gently.
4. Chill salad overnight. Transfer salad to a salad bowl. Sprinkle with crumbled bacon and serve at room temperature.
