APPLE- BUTTERSCOTCH BREAD
2 cups biscuit mix
¾ cup sugar
¼ tsp salt
1 tsp baking powder
1 cup quick-cooking oatmeal
½ cup butterscotch chips
1/3 cup milk
1 Tbs orange juice
1 large egg
1 cup applesauce
1. Preheat oven to 350 degrees F. and grease and flour one loaf pan.
2. In large bowl, stir together biscuit mix, sugar, salt, baking powder and oatmeal. Add butterscotch chips.
3. In separate bowl, combine milk, orange juice and egg. Stir into dry mixture. Add applesauce; beat vigorously by hand for 30 seconds until well combined.
4. Spoon into pan and bake for 50-60 minutes, until toothpick placed into the center of the loaf comes out clean. Cool before slicing.
Yield: 1 loaf
