Mini Popovers
Yield: 12 mini popovers
Prep Time: 15 min
Cook Time: 25 min
Delicious with breakfast foods such as frittatas and omelettes, and also great to accompany soups, salads and chilis.
Ingredients:
3/4 cup low fat buttermilk
2 large eggs
3/4 cup sifted all-purpose flour (sift, then measure)
1 tablespoon salted butter
pinch of saltDirections:
1. Preheat oven to 375 degrees F. Spray 12 cup mini-muffin pan with nonstick spray.
2. In a blender, place buttermilk and eggs and blend on medium speed. While blender is running, slowly add the flour, butter and salt. Blend until combined 1 to 2 minutes.
3. Heat the muffin pan in oven just until cooking spray begins to smoke a bit 1 to 2 minutes. Remove the pan from the oven and carefully spoon batter into the cups, filling each just to the rim. Bake until popovers are puffed and golden- 25-30 minutes.
