CHOCOLATE- PISTACHIO CUT-OUTS

1 cup butter
2/3 cup brown sugar
1 tsp vanilla
1 large egg, beaten
2 ¼ cups flour
¼ cup unsweetened cocoa powder
¾ cup finely chopped pistachios
¾ cup semi-sweet chocolate
1 Tbs shortening
¼ cup ground pistachios
1. Combine butter and sugar in a saucepan; heat and stir. Remove from heat and stir in vanilla- cool for 15 minutes. Stir in egg, flour and cocoa, then nuts. Cover and chill for 30 minutes, or until easy to handle.
2. Roll dough to ¼” thickness; cut into 2″ hearts. Bake on ungreased cookie sheet at 350 degrees until firm- about 9 minutes. Cool.
3. Melt chocolate pieces and shortening in a small pan (or Pyrex container in microwave). Dip half of each heart in mixture. Edge with ground pistachios.
Servings: 24
Yield: 4 dozen
Cooking Tips
*When melting chocolate and shortening in microwave, cook for 30 seconds… take out and stir… cook a little more… stir… until nice and smooth for dipping.
**Try dipping in sprinkles or other goodies too!
