Blue Cheese Steak Sauce
1/2 cup (1 stick) salted butter
4 ounces blue cheese
2 tablespoons chopped chives or shallots
1. Place all ingredients in a saucepan over low heat. Blend well but do not boil.
2. When ready to serve, cover steaks with lots of freshly ground pepper and drizzle blue cheese sauce on top.
