The enchiladas are hands-down my favorite leftover turkey recipe I’ve ever eaten. I had a baby last week, and they were one of the freezer meals I made with turkey leftover from an early Thanksgiving dinner. The soup looks really good, too. Maybe I’ll try that one next year — I’m not in charge of food this time around.
