Chocolate Fudge Brownies
Dear Chocolate- Lover Friends,
Oh… do I have a brownie for you. It’s totally chocolatey- it’s packed with chocolate chips, and it’s topped with even more chocolate! It’s from blogger Joy Wilson’s new cookbook: Joy the Baker. These are Chocolate Fudge Brownies!

Joy tops these with a Chocolate Buttercream Frosting in her book. Her frosting has Ovaltine Powder in it, which is pretty much brilliant. If I had Ovaltine Powder in my house… it would be a very dangerous thing indeed. I was truly obsessed with Ovaltine Powder and its magical qualities of transforming milk into something wonderful when I was a pre-teen. I.used.to.eat.it.obsessively.by.the.spoonful! #confession

Anyway… I opted to top Joy’s brownies with a simple chocolate glaze instead. It worked for me, and it worked for these brownies, and it worked for everyone who consumed them.

I have had the good fortune of meeting Joy the Baker a couple of times. She’s a fun, flirty, cute, single girl. I’d totally set her up with my best guy friend if he wasn’t already married. Joy’s debut cookbook, Joy the Baker, was released at the end of February. Her book is no less than awesome. Joy shot all of her own photography, and I love all of her tidbit stories and intros to her recipes. The girl is just plain cool. I’m excited to try the following recipes from this book: Baked Coffee Cake French Toast, Giant Cinnamon Rolls with Buttermilk Glaze, Oatmeal Cookie Pancakes, Peanut Butter Bacon Cookies, Peanut Butter Birthday Cake, Pineapple Malted Milkshake, Strawberry Cookie Dough Ice Cream, Chocolate Malt Bread Pudding and Vanilla Bean Snickerdoodles. Chocolate Fudge Brownies
Yield: 16 to 20 brownies
Prep Time: 20 min
Cook Time: 25 min
Ingredients:
BROWNIES:
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
3 ounces unsweetened chocolate, chopped
1/2 cup packed brown sugar
1/2 cup granulated white sugar
2 large eggs
1 large egg yolk
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chipsGLAZE:
2/3 cup powdered sugar
2 tablespoons unsweetened cocoa powder
1/4 teaspoon vanilla extract
4 to 5 teaspoons hot water (or more, as needed)Directions:
1. Preheat the oven to 350 degrees F. Spray an 8-inch baking dish with nonstick spray, then line it with a strip of parchment paper (edges hanging over), and spray the parchment with nonstick spray too.
2. Prepare the brownies: In a medium bowl, whisk together the flour, baking powder and salt. In a large, microwave-safe bowl, heat the butter and chocolate until butter is melted (about 75 seconds). Whisk the butter and chocolate together until the chocolate is melted and smooth (heat a few more seconds, if needed). Alternately, you may melt the butter and chocolate together in a pan set on top of a pot of simmering water. Remove from heat. Whisk the sugars into the mixture. Then whisk in the eggs, yolk and vanilla. Stir in the flour mixture until well incorporated. Fold in the chocolate chips.
3. Pour the batter into the prepared pan and bake for 25 to 30 minutes. Bake until a skewer inserted into the center of the brownie comes out clean. Remove from the oven and cool completely before adding the glaze.
4. Prepare the glaze: In a small bowl, combine the powdered sugar, cocoa and vanilla. Whisk in 4 teaspoons of hot water, then add more water- 1 teaspoon at a time- until you reach a desired glaze consistency. You want to be able to pour it on the brownies.
5. Use the parchment paper to move the brownies from the pan to a cutting board. Pour the glaze on top of the brownies, and use the bottom of a spoon to gently spread it to the edges. Let the glaze set (chill if you'd like) before cutting.

I <3 being the birthday baker for my family! It started out as my gift to them when I was going to college and quickly became the highlight to each individuals birthday. Some are traditional and request the same thing every year, others leave it up to me.

I love Joy! I love to bake cheesecake, but don’t do it often because my husband doesn’t like it. Today I baked zucchini bread, though, which I love to do because my recipe is awesome and amazing and I don’t share it with people because it was my great-grandmother’s and a family secret. But it’s the best zucchini bread you’ll ever eat.

My absolute favorite thing to bake is sour cream coffee cake. It’s a little bit fussy, but it is my go to baked treat for baby shower brunches, fall coffee dates with friends, and a “just because” treat for my husband and daughter who just love it. I really love to bake. Any excuse is reason enough for me!

I love to make recipegirl’s Wedding Cake Cupcakes and the Buttercream Icing!!! Soooo melt-in-your-mouth good!!!! Also easy! Second favorite thing is gooey cinnamon rolls. Neither one of which I can eat right now because I am being good and staying off of sweets at the moment. BUT… I’m looking forward to making them very soon.

cookies. usually a variation on the classic chocolate chip. they are so easy to make and so wonderful to eat. plus, i really enjoy creaming the butter and sugars and later mixing in the flour. i actually find it therapeutic, in a way. lots of times i’ll just mix up a dough and then stash it in the fridge for later.

Omg I love to bake tres leche cake (from Spanish)
It is a sponge cake made with 3 milks, evaporated, condensed & milk or sometimes I add coconut milk. Its delicious! If you order it at a restaurant, it will be too repugnant which is the reason I make my own version. It can be made as a butter cake as well, it still comes out yummy for your tummy!

Just put sugar and flour in front of me and I am a happy camper. However, brownies top the list of my faves to cook. I make many different varieties and always have them on hand when guests arrive. I have teens, with many friends, and bake almost every day to keep them all fed!

I LOVE to make huge CARMEL ROLLS melting 3x the amount of brown sugar & butter & pecans in a huge pan on a burner until carmelized then cooling & putting prepared dough in the pan & baking. YUM

I love to bake anything unique. Especially cookies. My favorite thing i have baked recently was a red velvet cheesecake. It was so fun. Tuened out beautiful and tasted even better.

I love the challenge of baking new recipes that catch my attention. I sometimes get inspired by something I’ve seen or something I’ve eaten and I just want to try to re-create it. But what I most love is to bake treats for my friends. Some enjoy cookies most, some ice cream, some cakes, some pastries…. I love to make them all….and I usually make an assortment. I think what I love to bake most of all are cakes because they can be so full of surprises…Beautiful on the outside, with hidden treasure on the inside. There are so many combinations of flavors, and layer upon layer of taste combinations and textures…Cakes are like presents and nobody really knows what it is until that first slice comes out, and then everybody cues up to get their own piece.

My absolute favorite thing to bake…I don’t know if I have one favorite. Is that a cop-out? I love baking anything that makes people stuff their faces and be happy – brownies (plain or jazzed up) and monkey bread are always a big hit, but perhaps my favorite is from-scratch-start-to-finish chocolate cream pie because it’s the most challenging (and therefore the most rewarding).

Ahhh… an interesting question. The first thing that comes to mind when you say “baking” is pizza and the second is bread. Reading the comments I realize that we are talking of baking of the sweet variety and in responding to those comments I have to agree first with those who site Christmas baking as their favorite. And to end my theme, my second thought would be muffins. Being a frosting fanatic and constantly struggling with extra pounds I tend to choose muffins over cupcakes. They satisfy my sweet tooth and offer such a variety of ingredients! PS… I LOVE JOY THE BAKER!!!

I love finding new and different recipes for cheesecake! I’ve made banana cheesecake, hazelnut cheesecake, ricotta cheesecake, and sweet potato cheesecake, but my favorite is chocolate chip cheesecake. My boyfriend’s favorite is plain old NY Style cheesecake. Really, all of it is delicious.

I think my favorite thing to bake are things that seem a little challenging.
I once saw that a well known bakery in NYC was selling crepe cakes for a crazy amount of $(b/c I would need it shipped). That prompted a google search, which led me to an amazing article in the NY Times, complete with recipes. Thanksgiving was around the bend and I pulled it off without a hitch! It’s now become my Thanksgiving dessert tradition.

My favorite cookie of all time since I was old enough to bake without mom is my Mamaw Forry’s Sugar Cookies! They are fluffy and topped with sugar or little sprinkles and confections. My older brother and I would get home from middle school and whip a batch up for the evening. Mom really didn’t buy boxed cookies in the 1970′s it was pretty much home made everything. Oh the best part in 7 minutes they are out of the oven and in our mouths!

My favorite thing to bake is banana pumpkin bread. It’s so simple but so yummy! I know it’s mainly an autumn treat and it’s currently spring, but it’s still my favorite because it has that pumpkin-y sweet flavor.
That said, I wouldn’t mind making those brownies either! Oh, yum, do those look good!

favorite thing to bake? hm. i’d have to go with compost cookies, momofuku style. put everything you could ever want in a cookie, and it will come out good. i promise.

My latest favorite is a lemon olive oil cookie that is just so so so delicious. And it’s extra great because it “happens to be vegan” rather than “vegan by design”

My FAVORITE thing to bake is my Grandma’s Xmas cookie cutouts with homemade frosting. Soooo good!!!

Having to choose a favorite isn’t a hard thing to do, since the feeling you get from making a wonderful recipe says it all. So the most comforting recipe I indulge in making, are my grandmas chocolate walnut chunk cookies. It takes me back to when I was a young little girly standing on a chair so I could see over the counter. Did I mention the smell of these surrounds the house in deliciousness?! Yummmmm

They do look scrumptious. I love a good brownie and years ago I discovered a trick in making the Best brownies no matter what recipe you use. It is to sprinkle over the brownies while they are still hot from the oven Godiva Dark Chocolate liquor. The milk chocolate liquor is not as good. This makes the brownies have such a yummy rich, decadent flavor you will never leave this ingredient out of your brownies again!

Saw these on Pinterest tonight, made them tonight! turned out yummy even though I had semi sweet chocolate blocks and only stick margarine.
