Brown Butter- Toffee Pecan Blondies

Are you as in love with Seattle as I am? I’ve been there several times, but I feel like I need another 42 1/2 days to explore and really get the lay of the land. Though it might be a fact that it rains a fair amount in Seattle, they do get 48 sunny days on average per year, it’s truly beautiful country and a fun city… and the FOOD opportunities are endless.

The recipe I’m sharing with you today comes directly from the Volunteer Park Cafe in the North Capital Hill neighborhood of Seattle. It’s a happenin’ place serving coffee, pastries, soups, sandwiches, and dinner too. VPC is committed to using locally sourced food. Pastry Chef Heather Earnhardt contributed her recipe for Brown Butter Bars to the recently published Food Lover’s Guide to Seattle. I’ve renamed them Brown Butter Toffee- Pecan Blondies.

These are brown butter blondies in the best way… with added toffee bits and pecan pieces. Everything about them is perfect. They are moist and tender with a slight crunch from those added goodies.

These are just a few of the fun food places that have been highly recommended that I check out on my next visit to Seattle. My son and I are headed there in June for the BlogHer Food Conference (yep, I’m taking RecipeBoy – age 10- to his 1st food conference! He’s very excited!)  My son plans to visit a zillion of Seattle’s bakeries.  I guess I can go along with that plan (twist my arm…)

Brown Butter Toffee- Pecan Blondies

Yield: 25 blondies

Prep Time: 20 min

Cook Time: 40 min

Ingredients:

1 1/2 cups (3 sticks) unsalted butter
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
4 large eggs
2 cups packed light brown sugar
1 tablespoon vanilla extract
1 cup pecan pieces
1 cup toffee bits

Directions:

1. Preheat the oven to 325 degrees F. Spray a 9x9-inch baking pan with nonstick spray. Line the pan with a strip of parchment paper so that it covers the bottom and comes up two sides of the pan. Spray the parchment paper with nonstick spray.

2. In a saucepan over medium heat, melt the butter and continue to simmer until it turns a deep golden brown (3 to 4 minutes- watch it closely and keep stirring every so often so it does not burn); remove from heat and let it cool to room temperature.

3. Sift together the flour, baking powder and salt. Set aside.

4. In a large bowl, use an electric mixer to combine the eggs and sugar. Beat on medium-high speed until light and fluffy, about 3 minutes. Mix in the vanilla and browned butter, scraping the sides of the bowl to incorporate all of the ingredients, as needed. Add the dry ingredients, pecans and toffee. Mix just until combined. Scrape the batter into the prepared pan.

5. Bake 45 to 55 minutes, or until a toothpick inserted into the center comes out clean (don't over bake- start checking on it at 45 minutes... it should feel pretty firm in the center). And it may take up to 60 minutes to get these baked to the right consistency, depending on your oven and the pan you use. Let the bars cool to room temperature before cutting.

    My husband used to play baseball in the Seattle area, so we took a trip there a few years ago so he could show me around. I immediately fell in love. In fact, if I were to choose where I lived, I’d choose Seattle!!

    We just moved to Washington and went to Seattle for the first time last week! We spent the day at the Seattle Center and took our kids to the Children’s Museum for hours. So…so far that’s our favorite thing there! Now we need to go a lot more because I know there is so much to explore there. And I can’t wait. I’d LOVE a copy of this book! Thanks!

    After spending one weekend in Seattle I went back home to MN and announced I was moving! That was 18 months ago and every day I am still in awe of the beauty around me. I highly recommend anyone come to visit – but beware, it may make you stay!

    Just returned from my first trip to Seattle last week. I absolutely LOVED it. We had 4 gorgeous sunny days and got to explore many bakeries, restaurants, and the amazing tulip festival. My favorite part of Seattle was strolling past the public market by all the delicious bakeries and coffee houses. The smell was overwhelmingly amazing. Was pleasantly surprised by this beautiful city!

    Should these be baked in 9×13 or at a higher temp? They are still quite wet and have been in almost 50 minutes.

      Please let me know how long you ended up baking them for. I baked at 325 in a 9×9-inch pan. They came out to be nice, thick blondies. I suppose you could use a 10×10 if you had it.

    I baked them for 60 min. and rechecked the pan size which was more like 8 1/2 x 8 1/2. After cooling and cutting, the center was perfectly moist and the edges were chewy (I’ll be saving that part for me =)). They are so yummy! BTW, I love your website!!

    I lived in Seattle for several years and LOVE the city (except for the 10 months of rain). To me, the best things about Seattle are the amazingly fresh seafood, Lake Washington/Lake Union on a sunny day with Mt. Rainier in full view, the coffee shops on every corner, and the laid back vibe.

    I would love to live in Seattle. I’ve never been there, but a number of friends have moved to your beautiful land of the falling rain.     years ago(I’m now 77), my daughter & I flew to Portland to visit my mom, but since this was our first time flying we thought at the first lay-over that we had to tranfer our own luggage, so we waited at the ramp so long & MISSED our plane & had to get another that went to Seattle first…we had to pay more,(not too much because we were both crying) and got to Portland hours later.     I went to Seattle this past August for a wedding up in Orcas Island. My husband, baby and I stayed in Seattle for a few days before the wedding and it was beautiful. We loved how walkable the city was and how stroller friendly it was as well. We ate some great food including Top Pot Donuts and Pike Place Chowder, just to name a few. It was a Beautiful city that I would love to get back to someday.

    We work overseas but Seattle is our homebase. We literally countdown the days, running tally on the refrigerator, until we can get on the plane to go home! It was a wonderful place to grow up and even more wonderful to return to every summer.     What I love best about the Northwest is that three of my nephews, a niece, and all their families live there! I enjoy the mild temperatures, clear days when one can see the mountains in all their glory, and all the sites to see. As a New York girl myself, it is fun to visit Seattle.     I’ve only been to Seattle once, thought I would love it, and did. :) The lush greenness everywhere reminded me that indeed, it is a rainforest (just not a tropical one), and the beauty of everything in bloom was astounding. Luckily, I get to go out there this May, so I’m looking forward to it! Also, looking forward to eating WELL while there. :)
