Quick & Easy: Glazed Pork Tenderloin with Pineapple

I’m entirely grateful for Martha Stewart (and her team). Some folks think of MS and think, “Oh, that lady is far too fancy for me.”  Not so.  She offers the fancy but she also covers the practical recipes too.  I often gain inspiration from both of her magazines and her entertaining cookbooks. Her Cookies cookbook is just fabulous, and I’ve got her Cupcakes book on my wish list. But her cookbook that actually has given me the most bang for my buck is Great Food Fast. It’s divided seasonally, and literally everything that I’ve tried from this book has been fabulous and family-friendly. My latest find: Glazed Pork Tenderloin with Pineapple

We’re big on pork tenderloin in our house. It’s the one cut of pork that I make without making it dried out beyond repair. My meat thermometer is my friend with all meats. I have the fabulous sort that you can insert into the meat… and then it has a long cord attachment that allows you to leave the temperature gage box outside of the oven (and it beeps when it has reached the right temperature). Love it 🙂

Pineapple is fantastic enough when it’s grilled, but it’s also pretty tasty when broiled in this recipe. It’s a perfect complement to the pork.

The lightly glazed pork is served with a sweet & ginger-scented Asian sauce and the broiled slices of pineapple. A bit of pork with a bite of pineapple. YUMMM! Our family loved this for a quick and easy dinner.  P.S.  I’ll bet you could grill this too if the thought of turning on your oven is too much this summer.

    Pineapple with pork is always a favorite here. Grilling does wonder to pineapple, too.
