Mango, Black Bean and Goat Cheese Quesadilla
This unusual recipe is quick, easy and absolutely delicious!

Servings: 4 servings (2 wedges per serving)

Ingredients
- 2 medium fat-free or regular flour tortillas
- 2 ounces crumbled goat cheese
- 1 medium mango (peeled and sliced into small pieces)
- 4 ounces canned black beans, drained and rinsed
Instructions
- Coat both sides of the tortillas with cooking spray. Place one tortilla in a hot skillet to brown. Flip the tortilla and add the cheese, mango and beans on half of the tortilla; fold the tortilla over to cover the ingredients. Cook until the tortilla browns, then flip and cook the other side; remove the tortilla to a cutting board.
- Repeat with the second tortilla and remaining ingredients.
- Cut each tortilla into 4 wedges and serve immediately.
