10 Minute Tomato Soup (Picky Palate Cookbook)
My grilled cheese + tomato soup obsession began when I was little. Just like 95.6% of the other Mom’s in America did, my mother served up Cream of Tomato soup from the red & white can once in a while (you can probably relate if you were a 70′s kid). I loved the stuff by itself, but when served with a grilled cheese sandwich it became extra-special. My favorite thing was tearing off bits of the sandwich and dropping it into the bowl to be scooped up with spoonfuls of soup. I totally admit to still doing that! Nowadays for lunch I make a grilled cheese with added fresh tomato (I won’t eat the canned stuff anymore), but it’s even better when I can whip up some homemade Tomato Soup to go along with that grilled cheese.

This super quick (10 minute!!) Tomato Soup comes from newly released The Picky Palate Cookbook. It’s creamy and delicious with some basil and garlic mixed in too. It’s also kid-friendly… get the kids to help you and show them how easy it is to make Tomato Soup! And don’t you dare forget the grilled cheese!

Jenny Flake’s Picky Palate blog has been a daily read for me since she began blogging five years ago. Her simple style and creative way with recipes works for me and my family. I always knew that her cookbook would be great too. I love that Jenny doesn’t use crazy ingredients that are tough to find at the grocery store, and that she keeps preparation simple. The book includes recipes for breakfast, main dishes, side dishes, appetizers and desserts. All of her recipes were created with picky palates in mind. I’m excited to try the Nutella- Banana- Stuffed French Toast, Maple-Bacon Muffins with Sweet Butter, Skillet-Baked Mac and Cheese, Spanish Rice, Homemade Potato Chips, Smoked Cheddar BBQ Chicken Mac, Garlic- Toasted Spaghetti Pot Pie, Shrimp Linguini in Tomato Cream Sauce, Black Bean Guacamole Burgers, Peanut Butter and Jelly Skillet Monkey Bread, and No-Bake Chewy Cookies and Cream Bars. My 11 year old son has tagged about 80% of the recipes in the book for us to make together. It’s definitely a must-have cookbook for families.

10 Minute Tomato Soup
Yield: 4 servings
Prep Time: 10 min
Cook Time: 5 min
Quick recipe for a creamy tomato soup!
Ingredients:
Two 15-ounce cans diced tomatoes
1/4 cup finely chopped sweet onion
2 medium cloves garlic, minced
12 medium fresh basil leaves
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup heavy creamDirections:
1. Add the tomatoes, onion, garlic, basil, salt and pepper to a food processor or blender. Pulse or blend until smooth.
2. Pour the soup into a medium saucepan set over medium-low heat. Add the heavy cream, stir to combine, and cook for 5 minutes, stirring, until hot. Serve warm.

I must say that tomato soup and grilled cheese is definitely a fall back meal in our house along with mac and cheese. My kids really aren’t that picky and I am very thankful for that. What a great giveaway…that book is on my list on of ones to buy!!!

We just had grilled cheese and tomato soup last night (ours came from the can, hehe…the 70′s girl in me I guess). Although, I prefer my tomato soup with a peanut butter sandwich dipped in the soup. mmmmm. With four kids I have been blessed to not have picky eaters. One of the four chooses to not eat meat, but otherwise life is good around here. My husband is probably the pickiest eater, he counts right? No casseroles when he eats…food doesn’t touch and mingle much on his plate!!! Meat, potato, veggie man.

Chicken is always good for the picky eater. Not fried but baked strips coated in crushed corn flakes. A question about your tomato soup recipe….can I just use crushed tomatoes and leave out the food processor step?

Comfort food when the kids had a bad day or feeling like they’re trying to get sick and just aren’t hungry. In particular, hamburger meat, shredded cheese and macaroni elbows gets everyone eating.

We decided that we weren’t going to allow our children to grow up to be picky eaters. You HAVE TO try everything once, but you can request certain things not to be made again. So far only spaghetti squash and non-fried forms of tofu have been vetoed. Still, we do have guests from time to time, and when they have picky kids I tend to make shells and cheese with mozzarella.

My daughter is so picky when it comes to fruits & veggies. On their own, she’ll eat carrots, potatoes, bananas, and sometimes apples (and maybe a couple others I’ve forgotten). We do a lot of fruit smoothies (w/spinach, flax, & chia seed). I mostly use frozen strawberries and blueberries, along with bananas, grapes, orange juice, apples…whatever I have on hand. I also like to roast carrots, zucchini, and other veggies, then mix them into home made tomato pasta sauce. The best part is that she helps and knows what’s in these, and still eats/drinks them

Pasta and veggies is my go-to in our family. I throw in all the veggies I have and I allow my kiddos to pick out the ones that aren’t their favorite.

Well recently I have been hiding all kinds of veggies in the food I make because I blend it up to non existence with our Vitamix. You can hide pretty much anything in ground meat, sauces, etc

Is there anything better than grilled cheese and tomato soup? I wish I could say that my obsession with that started as a kid too but being raised in a very traditional Korean family, I didn’t really get a chance to experience that until I started cooking for myself!

I enjoy making homemade chicken nuggets for my little picky eater (although he isn’t all that picky) with green peppers and grapes on the side. If he wants a little extra crunch, I’ll give him a serving of veggie straws (a staple at our house). We also like making our own pizza, this gives the kids (ages 1 and 4) a chance to “make their own” dinner.

I have 6 kids, but one go-to meal that I can get them all to eat is cheesy scrambled eggs with chunks of ham mixed in. Breakfast for dinner is always a winner! Ha!

My family is very picky, AND my husband is allergic to chicken,(Its terrible) so cooking can be challenging for me sometimes. But As cheesy as it sounds, ( no pun intended) my famliy will never complain when i make cheesey quesadas and french fries. easy and we can all eat, and be merry:)

Luckily no picky eaters in my house, but pizza is a universal favorite. In a pinch I will use Pillsbury thin crust pizza dough, jarred sauce, fresh mozzarella, veggies and .crumbled sausage. Or if they’re extra picky, just sauce and cheese.

The meal that my pickiest eaters will eat the best is tin foil dinners. I just throw carrots and potatoes in a foil packet with a ground turkey patty. I sprinkle some garlic salt and kosher salt and pepper, throw it in the oven at 400 degrees for about 40 minutes and my kids devour it. That and spaghetti. I cook gourmet meals several times a week and those are the only 2 things, my kids will eat. Oh well!

For my husband, who’s picky, I do a roasted pork tenderloin with fresh herbs and garlic. It’s fail-proof, filling, and a great lean meal. I serve with veggies for me and garlic mashed potatoes for him. I would love that picky eaters book. I checked it out on amazon, and it looked awesome! Pick me!

For my picky eaters we just recently tried something new that we call “Super Stuffers.” We rolled out Grands biscuits and put toppings inside, folded them over, pinched the edges tight and baked. I used all kinds of leftovers in my fridge…chicken, ground beef from tacos, veggies, shredded cheese and pepperoni. They had a blast creating combinations and actually ate dinner with out any issues. I have one that likes to dip things, so he had some warm tomato sauce with his. They make a great lunch box addition the next day too…

My grandson doesn’t care for squash, sweet potatoes or cabbage but eats carrots, celery, any kind of beans, onions-both green & regular, radishes, tomatoes, cucumbers, etc. He knows he can eat anything in my garden as I garden organically so can’t call him a finicky eater & my kids, all grown now, did the same thing. Take care when making tomato based soups with dairy or the soup will curdle as this picture shows. But I LOVE tomato soups – I usually make mine with crushed tomatoes and chicken broth then add a splash of cream for richness at the end and a sprinkle of parmigiano cheese. Picky eater food is either a creamy potato soup or pasta with meatballs! All kids and picky adults love pasta!

The best recipe I’ve made for my kids is cupcake meatloaf. You prepare meatloaf how you typically like it. And then you take a small handful per whole in your cupcake pan. After there is a ball in each space, I take a spoon and dig a little holes. These holes are filled with ranch, ketchup, cream soup, different bbq sauces, soy sauce…. whatever you please! Ranch, Ketchup, and bqq are our favorite. My best friends kids like the honey bbq and ranch! Sometimes they enjoy trying more just to guess whats in the middle. Topping with cheese the last few minute you bake is optional!

Everyone in our family seems to like potstickers. I just add oil and a little bit of water in a pan, add potstickers, cover and wait until they are just about ready. Then I remove the lids and let them brown a little bit. Quick and easy.

when i lived at home a lot of were picky eaters but the one thing we couldn’t get enough of was moms slickers. Dumpling/noodle like squares thrown in with boiled chicken and chicken broth for six hours. It was great for non-meat eaters and meat eaters. She would always pair it with her homemade apple crisp. Defiantly the best meal in the house.

I have always depended on an old standby for picky eaters. It is amazing
how many veggies you can sneak in, while making a homemade soup.
I retired after 26 years from being a cook at a grade school, and always
put “extras” in my soup recipes (pumpkin,spinach,broccoli, peppers, to name
a few). The key was to running the veggies through the food processor first~

Cheese pizza is the number one pick here… so are some kind of jelly sandwiches (either PBJ, but someone doesn’t like peanut butter, so she often gets cream cheese and strawberry jelly)

My daughter (grown and on her own now!), was my picky eater. She wouldn’t eat meat and I worried constantly about her. The only meal she ate was breakfast so I often had breakfast for dinner in the evening. She loved omelets and would eat sausage patties (not links!!!). and no bacon! Where did this child come from!??! I would load the omelet with camoflaged veggies diced very fine or even ground up.She won’t eat meat attached to a bone-no steak, pork chop, or bone in chicken. To this day she has never tasted turkey!

My husband is the pickiest eater of all! I love any type of fish… he does not. Maple glazed salmon is a go to for us at least once a week… I guess the sweetness is enough of a cover!

I have 4 kids under 7 and almost all of them are picky! My go to meal for them is teriyaki tofu or sweet and sour meatballs. They always eat something with soy sauce and rice!

Every Wednesday is pizza night at my house. We make homemade pizza together. It is a great homemade meal for picky eaters because we can personalize it. My boyfriend loves everything on his pizza. I am the picky one. We always end up with a half and half.

Straight up chicken cutlets breaded and cooked in a pan. The kids like them plain or maybe dipped in something. I can dress them up how I like and/or add pasta.

Add extra cheese to anything cheesy and we have a winner! Pizza usually works! Oddly, my Mom’s bean soup recipe is well received when it’s cold, too! Especially with garlic cheese biscuits! GREAT give-away!!!

My kids love teriyaki chicken and vegetables over rice. Veggies they wouldn’t eat on their own are suddenly delicious with teriyaki sauce on them.

That’s a tough one, even though I have grown kids and grandkids. It makes get-togethers challenging. I usually include kids food, like homemade chicken nuggets and adult food like a roasted meat of some kind. We do have veggie haters, so I avoid casseroles that might include them, and just serve them on the side.

yum, this looks delicious! now that the weather is getting cold I am researching soup recipes-this is quick and easy, def one to add to my list.
Usually I make some sort of pizza/calzone for the picky eaters in my fam with store bought fresh pizza dough that way everyone can customize what they want!

Now that my picky eaters have picky eaters of their own, they understand the frustration of trying to accomodate everyone’s tastes. Sloppy joes or mac and cheese where always a good bet, they could doctor them up to suit their own tastes!

Running a daycare I deal with picky eaters all day! Im a big fan of Home made foods and fresh fruits and veggies.
I’m always looking for a new way to present them to my own kids as well as the daycare kids.
A favorite with my family and daycare kids; grilled chicken quesadillas. I mix mild green chili’s & cheese with pre-grilled chicken chunks. grill over a hot-dry skillet and top with fresh salsa and low-fat sour creme. some of the kids won’t eat the salsa and/or sour creme but love the quesadilla!
