My little boy turns 11 today! It’s totally crazy. He was just a baby… like yesterday! The scariest part about having an 11 year old is to think that in 7 years this kid will be leaving me to go off to college. I have just 7 years to make sure he’s molded into the best person possible to face the big, wide world on his own and make a life for himself. Whoa.
In a related story, it was career week last week in my son’s 5th grade class. I was invited to speak about my profession as a food writer and recipe developer, so I brought the kids some cupcakes with Cookies and Cream Frosting. I used these cupcake recipes. And the frosting is packed with Oreo crumbles.
The 5th graders were pretty interested in what I had to say. I told them about how I spend my days… developing recipes, testing them, sampling them, taking pictures of them, writing about them, and being quite active on the computer. I told them about how I got started and how hard I’ve worked to create what I have. I told them about the fun food-related opportunities that occasionally come my way- trips to New York City, Louisiana, Mexico, Napa Valley and Italy. And I told them about my cookbook too. I left that classroom feeling all high and mighty and thinking that I had just about the coolest job in the world.
And then my son came home from school. He told me about the fighter pilot. And the engineer who worked for Disney designing the amusement park rides. And then there was the Dad who shared a YouTube video of himself almost getting killed by a deranged elephant. I guess my job isn’t all that exciting after all.
But my son disagreed. He insisted that I was second favorite only to the fighter pilot. What a sweetie. I read through 36 thank you notes and discovered that many of the kids were excited about trying to start their own blogs and using their cameras to start taking pictures of food. They told me that they loved my photography and that everything on my site looked delicious. A few of them were inspired to ask their parents if they could help out more in the kitchen. And they told me that they loved my cupcakes too 🙂
Happy birthday to my dear boy Brooks. May your 11th year be as fabulous as your first 10! If you’d like to wish RecipeBoy a Happy Birthday, head on over to his food blog and visit his birthday post. He’s loving the attention!

Recipe Details
Ingredients
- 3 cups powdered sugar
- 1 cup (2 sticks) salted butter, at room temperature
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons whipping cream
- 12 OREO cookies (or other chocolate or vanilla cookie with cream filling), crumbled finely
- 12 to 15 additional OREOS, for garnish (optional)
Instructions
- In a large bowl, with a hand or stand mixer, combine the sugar and butter on low speed. Mix until well blended. Increase the speed to medium and beat for another 3 minutes.
- Add the vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for desired spreading/piping consistency. Add the cookie crumbles and mix just until combined.
- Scoop into a piping bag with a wide tip and pipe decoratively onto cupcakes, or spread onto cupcakes as desired. Garnish with a whole Oreo cookie (if using).
Notes
- NOTE: nutritional information is for the FROSTING on one cupcake (not the actual cupcake), and the calories do not include an optional OREO on top of the cupcake.
I think I’ll never stop eating them…
Happy Birthday Brooks! Lori, you’re an awesome mom! Those 5th graders were very lucky to get these cupcakes, they look awesome!
How sweet! Happy Birthday to your little guy!! I have a serious weakness for all things cookies and cream! Lucky kids!
That’s so sweet! You beat a Disney ride designer, and the elephant-dodging dad, I think that says a lot about the powder of food…especially desserts. 🙂
These cupcakes are adorable! I love cupcakes that find a way to incorporate cookies. And the bespeckeled frosting is making crave cookies and cream ice cream…which is always a good thing.
How fun!! So cool that you got to go talk to his class, and they were all impressed. How could they NOT be!! The frosting sounds wonderful – perfect for a birthday!
These are absolutely fabulous! It’s a perfect party idea, as I have lots of friends who love Oreo.
You’re such an awesome mom, Lori! Happy birthday to recipeboy!
So sweet! I love how you inspired some of the kids to start blogging. I’ll bet the fighter pilot didn’t bring cupcakes. And I’m seriously craving sugar now thanks to those pictures– yum!
I love this story! This is something that your son will always remember and I’m sure he is very proud of his Mom! This frosting is going to be made at my house very soon! Thanks for sharing.
What a great story – I truly believe cooking and kids just go together. I haven’t found one who doesn’t like to help out in the kitchen. And those cupcakes look heavenly!!
Talk to me about delicious. Crazy good. Happy birthday to your baby!
I think both your frostings look delish! Your son has done a
remarkable job on his website. I had already wished him a
Happy Birthday on his website.
Thank you!
I have to laugh at your post! You think your son will be leaving your house in 7 years? ha ha My teen is 20 and she chose a local college, so she’s staying at home. She wants to move out but seems to spend all her money on clothes, food and Starbucks! I don’t think she’ll ever leave!
Your cookies and cream frosting looks wonderful!! Happy Birthday to your son!!
That’s not too shabby to come in second to a figher pilot. I mean….it was a fighter pilot, which probably makes everyone think of Jedis. Or is that just me? Anyway, happy birthday to your son! I want to eat the cookies and cream recipe out of the bowl.
That’s a great story! It’s really cool the kids checked your site and commented on the pictures. Plot is cool, but developing recipes yields tangible results daily! I like the vanilla Oreo cupcake, never tried that!
This is the perfect birthday frosting 🙂 I love the golden Oreo version…yum!
That is so sweet! And Happy Bday Recipe Boy!!
Those cupcakes look like a perfect way to celebrate an 11th birthday! It has to be so fabulous to hear that the kids are more encouraged to get in the kitchen with their parents after hearing you talk about what you do!
Getting kids involved in the kitchen is definitely KEY to getting this country into a healthier place..so you did good! I’m sort of in love with this frosting. Oreos are the one storebought cookie I can NEVER turn down!
Lori, I’ve been searching for the perfect cookies n cream frosting! I love the golden oreo version. 🙂
Happy Birthday to Recipe Boy!!
Now this is one great frosting, my husband loves oreo cookies, and I will make this for him!
oh it goes so fast doesn’t it?
I have tried to find a better cupcake recipe and there is none better than yours Lori…and I AM jealous of your job, so if you ever get as famous as the PW I am available to apply for your assistants job, you will need them. ;^)…m
Love this idea! I love the whole cookies and cream flavor combo, but never thought to use it for frosting. Will be trying this one out very soon!
