Red Snapper with Pineapple Salsa

Red Snapper w/ Pineapple Salsa
Yield: 4 servings

The fresh salsa adds nice texture and freshness to the dish.
Ingredients:
1/4 cup fresh cilantro, minced
1/2 yellow bell pepper, seeded and minced
1/2 green bell pepper, seeded and minced
1/2 large sweet onion, minced
1 cup fresh pineapple, minced
1 Tablespoon vegetable or canola oil
3 medium limes, juiced
1 1/2 pounds red snapper fillets, cut into 4 serving piecesDirections:
1. To prepare salsa: In a bowl, mix cilantro, peppers, onion and pineapple. Cover and chill.
2. Combine oil and fresh lime juice in small bowl. Set aside.
3. Heat and oil grill. Grill snapper for approximately 4-8 minutes on each side, basting with lime juice mixture. Fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.
