Sweet Potato Pie

SWEET POTATO PIE

One 9″ unbaked pie crust
1½ cups mashed sweet potatoes
1 stick butter, melted
1½ cups granulated sugar
3 Tbs flour
2 large eggs
2/3 cup evaporated milk
1 Tbs fresh lemon juice
1 tsp vanilla extract

1. Preheat oven to 375 degrees F. Place crust in 9″ pie pan and crimp edges.

2. Combine all ingredients and pour into pie shell. Bake for 45 minutes, or until knife inserted in center comes out clean.

    this is my first time ever making a pie from strach. it came out great! though i did not measure out the mashed sweet potatoes instead i mashed up 3 medium sized ones and had enough filling for 2 pies plus alittle extra. my pie shells came out alittle to dark but thats o.k. it was still very good
