Apple Cole Slaw

Terrific on its own, but one reader suggests adding some drained pineapple tidbits and chopped walnuts.

Ingredients:

4 1/2 cups red apples, cored & sliced thinly into bite-sized pieces
3 cups green cabbage, shredded finely
1 cup sour cream
3 Tablespoons fresh lemon juice
1 Tablespoon granulated sugar
3/4 teaspoon salt
1/8 teaspoon pepper
1 Tablespoon poppy seeds

Directions:

1. In large bowl or plastic portable container with lid, lightly toss ingredients until combined well. Cover and refrigerate at least 1 hour before serving.

Tips:

*Keep chilled until ready to serve.

    No, I don’t think freezing cole slaw is a good idea!
