This easy Summer Couscous Salad is a fresh and colorful side dish made with zucchini, yellow squash, red bell pepper, pearl couscous and fresh herbs tossed in a simple red wine vinaigrette. It’s an easy summer salad that’s perfect for barbecues, potlucks and warm-weather dinners.

When summer vegetables are plentiful, I’m always looking for easy summer salad recipes in which to use them. This couscous salad is a great one because there’s very little cooking involved, and it’s actually better when it’s made ahead and given some time to chill.

The zucchini and yellow squash are added raw, so they stay crisp and fresh. Red bell pepper adds sweetness and color, while parsley and/or basil add plenty of fresh flavor. Toss everything with the simple homemade vinaigrette, refrigerate it for at least an hour, and it’s ready to serve.

What is Pearl Couscous?

Pearl couscous is larger than traditional couscous and has a slightly chewy texture that’s perfect for salads. You may also see it labeled Israeli couscous at the grocery store.

It’s actually a tiny pasta rather than a grain. For this recipe, simply cook the pearl couscous according to the package directions, then let it cool before adding it to the vegetables.

You’ll need 1 cup of cooked pearl couscous for this salad. Use the rest of your Israeli couscous to make my Couscous with Pine Nuts and Parsley recipe.

Here’s a quick look at the ingredients you’ll need to make this easy couscous salad:

  • Zucchini and Yellow Squash: Use fresh, firm summer squash and chop it into small pieces. There’s no need to peel or cook it.
  • Pearl Couscous: Cook it according to the package instructions and let it cool before assembling the salad.
  • Red Bell Pepper: This adds great color, crunch and a little sweetness.
  • Fresh Herbs: Italian parsley, basil or a combination of both work well. I especially like using a little of each when I have them on hand.
  • Extra Virgin Olive Oil: This is the base of the simple vinaigrette.
  • Red Wine Vinegar: Adds a nice tangy flavor that pairs well with the fresh vegetables.
  • Garlic: One fresh garlic clove adds plenty of flavor to the dressing.
  • Salt and Pepper: For seasoning.

How to Make Summer Couscous Salad

This is a very simple salad to put together.

  1. Combine the salad ingredients. Add the chopped zucchini, yellow squash, cooked pearl couscous, red bell pepper and fresh herbs to a large bowl. Toss to combine.
  2. Make the vinaigrette. Whisk together the olive oil, red wine vinegar, garlic, salt and pepper.
  3. Toss and chill. Pour the vinaigrette over the couscous and vegetables and toss everything together. Cover the salad and refrigerate it for at least one hour before serving.

The chilling time is important because it gives the couscous and vegetables time to soak up some of the flavor from the vinaigrette.

Recipe Tips

  • Let the couscous cool. You don’t want to add hot couscous to the raw vegetables. Let it cool to room temperature first.
  • Chop the vegetables fairly small. Small, similarly sized pieces make it easier to get a little bit of everything in each bite.
  • Don’t skip the chilling time. This salad tastes better after the flavors have had a chance to come together.
  • Taste before serving. After chilling, give the salad another toss and taste it. Add a little more salt and pepper if needed.
  • Make Ahead Tips: This Summer Couscous Salad is actually best when it’s made ahead. Prepare it at least one hour before you plan to serve it so the vinaigrette has time to flavor the couscous and vegetables. You can also make it several hours ahead and keep it covered in the refrigerator. If you’re preparing it a day ahead, I recommend giving it a good toss before serving. If it seems a little dry, drizzle in a small amount of olive oil and red wine vinegar to freshen it up.
  • Storing Leftovers: Store leftover couscous salad in a covered container in the refrigerator. It’s best enjoyed within about 3 days. Because the vegetables are added raw, they’ll gradually soften as they sit in the vinaigrette. The salad will still taste good, but it’s at its freshest during the first day or two.

Easy Additions and Substitutions

One of the nice things about a simple couscous salad is how easy it is to change things up.

  1. Try adding crumbled feta cheese for a salty, creamy element. Chopped cucumber or cherry tomatoes would also be delicious if you have more summer vegetables to use.
  2. You could add sliced olives for a Mediterranean-inspired variation, or toss in some toasted pine nuts or sliced almonds for crunch.
  3. If you want to turn this into more of a main-dish salad, add chopped grilled chicken or shrimp.
  4. And if you don’t have red bell pepper, orange or yellow bell pepper will work just as well.

What to Serve with Couscous Salad

This is the kind of side dish that works with just about anything you’re grilling during the summer.

Serve it alongside grilled chicken, steak, burgers, salmon or shrimp. It’s also a good addition to a summer buffet or potluck because it can be made ahead and served chilled.

I especially like it for those dinners when you’re grilling a simple protein and want something a little more interesting than a green salad on the side.
