Blue Cheese Cole Slaw

This is a really different cole slaw recipe. The blue cheese really works with the sweet red grapes. Your guests will be surprised & delighted- it’s one of my faves.

BLUE CHEESE COLE SLAW

1 cup mayonnaise (ok to use half nonfat and half regular or all light mayo)
¼ cup dijon-style mustard
½ cup crumbled blue cheese
2 Tbsp granulated sugar
2 Tbsp cider vinegar
16 ounce package shredded coleslaw mix with carrots
2 cups seedless red grapes, halved

In a large bowl, whisk together mayo, mustard, cheese, sugar and vinegar. Add the coleslaw mix, and grapes. Stir until evenly coated. Chill until serving.

Servings: 12

    This is a fabulous cold slaw. I’m not a huge cabbage fan, so I use broccoli slaw instead…mmmmm.
