Here’s a Slow Cooker Lasagna recipe that has only 5 ingredients.
This dinner recipe is a big hit in my house. And I’m so happy to have a slow-cooker recipe that I can use for busy days where I don’t have time to cook. How cool is it that a slow cooker can make lasagna for you? Yes. Very cool, indeed!
Slow Cooker Lasagna
There is nothing like coming home at the end of a long day and having dinner ready to put on the table!

Ingredients
- 1 pound cottage cheese
- 2 cups shredded mozzarella cheese
- Two 26-ounce jars marinara sauce
- 2 pounds lean ground beef, cooked
- One 9-ounce package lasagna noodles
Instructions
- Place the cottage cheese and mozzarella cheese in a medium bowl and stir to combine.
- Add a thin layer of pasta sauce to the bottom of a slow cooker. Add a thin layer of the cooked ground beef and a layer of the noodles, breaking the noodles to make them fit. Top the noodle layer with a layer of the cheese mixture. Repeat until all of the ingredients are used, ending with a layer of sauce.
- Cover and cook on low for 6 to 8 hours. Serve hot.
Notes
- Choose a type of marinara sauce that has garlic and Italian spices mixed in.
- Possible add-in: Frozen, defrosted spinach, squeezed dry.
- Substitution/additions: Ricotta cheese, ground turkey.

Stir fry quick fry: Toss rice in rice cooker. Hmmmm, what’s in the pantry. What’s in the fridge? How many kids are home for dinner? Is my wife going to be home on time. OK. Portion and stir and serve. Wait, at some point in there, pour glass of wine. Sit and eat and talk.
My favorite go-to weeknight meal are salads. Big, hearty salads piled up with whatever leftovers or veggies I find in the fridge! I even raid the pantry and throw in different canned or pickled vegetables, and sometimes the result is even better than I expected!
Our go to dinner is always taco’s. So simple…I know, really original, huh?? I am super excited to try the slow cooker lasagna recipe. I always think to myself (after seeing something brought to life) “Why didn’t I think of THAT??” LOL!!

We buy a chicken (the kind the grocery store has pre-made), a bag of frozen mixed veggies, a jar of gravy and some biscuits. Cook everything together and split the biscuits and put the chicken, vegie, gravy mixture on top. Super quick and still feels homemade.
My favorite go to meal is pre-peeled and deveined shrimp tossed with a bottle of Catalina dressing, 1/4 cup jarred garlic and a teaspoon or two of chili paste. Bake at 350 for about 15 minutes, stirring occasionally. Serve with pasta or brown rice. Very yum!!!!

Paninis! We use our George foreman grill as a panini press and just add in whatever meat and cheese we want.
We like bbq’d chicken breasts with Diana honey garlic sauce, a caesar salad, and garlic bread. Takes very little time and it tastes great!
Our favorite quick meal is homemade pizzas on Naan bread. Yumm! Would love to win a copy of this book!
