Blueberry Salsa

Blueberry Salsa

Yield: 3 cups

Prep Time: 20 min

This is a very fresh and summery salsa- a nice change from the tomato version.

Ingredients:

2 cups fresh blueberries, chopped
1 cup whole fresh blueberries
1/4 cup fresh lemon juice
3 Tablespoons chopped fresh cilantro
2 medium seeded & minced jalapeno peppers
1/3 cup diced red bell pepper
1/4 cup chopped onion
1/2 teaspoons kosher salt
tortilla chips for dipping

Directions:

1. In a large bowl, carefully combine all ingredients.

2. Cover and chill until ready to serve. Serve with tortilla chips.

    While some people may be hesitant to try blue berries on tortilla chips, everyone ended up loving this recipe. I will make it again and again.
