Macadamia Nut Brittle
MACADAMIA NUT BRITTLE

butter
2 cups granulated sugar
½ cup water
½ cup light corn syrup
Two 7oz. jars macadamia nuts, each nut cut in half
2 Tbs butter
½ tsp baking soda
1. Butter a large baking sheet and set aside.
2. In a large nonstick pan, combine sugar with water and corn syrup. Cook over medium-high heat, stirring occasionally, until golden brown.
3. Stir in nuts; cook, stirring constantly, until medium brown. Be careful not to burn! Remove from heat; quickly stir in butter and baking soda. Pour onto baking sheet. Cool on a wire rack.
4. When cooled, break into pieces. Store in a tightly covered container.
