Here’s a Slow Cooker Lasagna recipe that has only 5 ingredients.
This dinner recipe is a big hit in my house. And I’m so happy to have a slow-cooker recipe that I can use for busy days where I don’t have time to cook. How cool is it that a slow cooker can make lasagna for you? Yes. Very cool, indeed!

When I’m in a pinch I usually go for quick mexican: quesadillas, enchiladas casserole, or homemade pizza.
When hungry and must eat NOW, then my go-to may be simply scrambled eggs … or tomato soup … or if there’s fluffy (fat) pita bread on hand, then it might be toasted pita round topped with gooey cheese (and maybe some chopped olives with a dash of tomatey-habanero sauce). In other words, easy, peasy, FAST!
I like Monte Cristo Sandwich’s.
Taco Soup we love to use Paula Deens recipe!!
My family loves chicken enchiladas. They’re super easy and delicious!
Quesadillas. There are vegetarians and mostly vegetarians in my family so these usually contain beans, cheese, salsa, veggies. Yummy and ready in minutes.
Hamburgers made on the foreman grill..I always have frozen patties in the freezer ready to go, toss a salad and done in 15 minutes!
Breakfast
smoked sausage, potatoes, and green beans
frozen pizza…i’m really not creative
My favorite go to meal is usually quesadillas–cheese one for the kids and cheese and whatever leftover meat and veggies we have in the fridge for hubby and myself!
My favorite easy weekend meal is a hearty potato soup that I’ll usually top with cheddar cheese, bacon bits and green onion.
We do breakfast for dinner a lot!
my favorite go to quick dinner is cereal!!!! 🙂
My go-to meal is something my brother created about 20 years ago when he was a teenager. We call it “Sam’s Surprise” because it was such a surprise that he was creating a meal instead of simply eating cereal out of the biggest mixing bowl we owned.
It consists of cooked ground beef mixed with barbecue sauce and shredded cheese sandwiched between layers of crescent roll dough. To finish it off I sprinkle some shredded cheese on top. Bake it in the oven for about 10 minutes, slice, and you’re good to go for a few meals! I’ve also added sauteed onions at times to give it some texture.
Every person I’ve ever served this to has been less than interested beforehand, and asking for the recipe after. Delicious!
Lemon chicken with roasted asparagus…quick, easy, and yummy!
My quick go to meal is black bean quesadillas.
Ham & cheese sandwich. Would love to change it up with this new cookbook.
Mine go to would have to be sausage and potatoes. Slice smoked sausage and slice potatoes, chopped onion, garlic and sage. Pan fried with a bit of olive oil until potatoes are crisp. Good with garlic knots!
My favorite go-to meal is a quick grilled chicken topped with marinara and feta
I made a quick breakfast for dinner- eggs over easy on an English muffin!
My favorite go to recipe for a busy day is a roasted chicken from the market. Serve it with a quick salad -tomatoes and lettuce from the garden and a then some baby potatoes (they cook up fast). Going to make the crock pot lasagne tomorrow night. Thanks for sharing with us.
I almost feel like this answer is cheating, but I just have to say for our family, the best, quickest weeknight meal is ALWAYS tacos. The hubby’s favorite dinner EVER (always the thing he says he’d eat if he had to pick only one thing to eat for the rest of his life), I love them, our 3-year-old daughter eats an entire soft taco on her own and our 1-year-old son has just gotten the hang of eating it without it falling apart too. Tacos. Win-win-win-win. 🙂
Breakfast for Dinner, if time is really short.
My favorites is Chicken, Broccoli & Cheddar quiche with a green salad. Always make a couple of quiches at a time and halve them and put in the freezer to pop in the oven when needed.
A super quick meal I can’t stop eating lately is a toasted sesame seaweed salad and grilled (or pan seared) tofu. Just rehydrate the seaweed in boiling water for a few minutes and toss with the sesame seeds, sesame oil, soy sauce, and rice wine vinegar. Super simple! And when I have extra time, I stir in some roasted shitake mushrooms. They are *amazing*, but not quick. ;p
