Grilled Mahi Mahi with Grilled Pineapple Salsa and Lemon Butter
Grilled Mahi Mahi w/ Grilled Pineapple Salsa & Lemon Butter
Yield: 4 servings
Prep Time: 25 min + marinating time
Cook Time: 15 min
Ingredients:
4 (8 ounce) portions of mahi mahi, skinned and boned
salt and pepper to tasteSALSA:
1/2 fresh pineapple, peeled and sliced to 1/4-inch thickness
1 red bell pepper, seeded and diced into 1/4-inch pieces
1/2 medium red onion, diced into 1/4-inch pieces
1/2 bunch cilantro, chopped
1 medium serrano pepper, seeded and chopped
salt and pepper to taste
1 teaspoon ground cumin
1 cup rice wine vinegar
1/4 cup extra-virgin olive oilLEMON BUTTER:
1 cup butter
1/4 cup freshly squeezed lemon juice
1 teaspoon minced garlicDirections:
1. Heat grill to medium-high and season the fish with salt and pepper.
2. Grill pineapple until you begin to see char marks; not falling apart or mushy. Let cool, dice and mix with the remainder of the vegetables and the seasonings, vinegar and olive oil. Let pineapple salsa marinate for 3-5 hours.
3. Melt butter and mix with lemon juice and garlic.
4. Grill fish and top with salsa. Drizzle with lemon butter.
