PANKO- CRUSTED RACK OF LAMB
8 rib rack of lamb (not frenched- ask your butcher)
salt and pepper to taste
3 Tbs olive oil
3 Tbs panko breadcrumbs
1 Tbs parsley
1 tsp oregano
1 tsp chopped shallots
½ tsp chopped garlic
pinch of anise seed (optional)
1. Preheat oven to 400 degrees F.
2. Season lamb with salt and pepper. Roast, uncovered, for 25 minutes.
3. In small bowl, mix together oil, breadcrumbs, and seasonings. Work mixture into a paste and spread on top of lamb (make more paste if needed).
4. Roast lamb 15 minutes more, depending on degree of desired doneness.
