Greek Yogurt Pancakes

On pancake-craving mornings, I find myself brainstorming ideas for new pancake recipes. One such craving-day recently had me thinking of Greek Yogurt Pancakes. I’m obsessed with doing something with Greek yogurt most every day anyways, so why not put it in pancakes? I did what I usually do… googled around to see what recipes were out there. First one I came across was on My Fitness Pal, but it was adapted from a food blog, of course: Everyday Belle. It looked like a winner and got big raves. So here goes!

They look pretty darn good, don’t they?  I made two types… this is the blueberry version.  Let me show you how I made them.

You’ll need a container of Greek yogurt- any kind, really.  I used Voskos- fat-free- blueberry flavor.  Add an egg (or 2 egg whites instead if you’re watching your calories).

Mix the egg into the yogurt.  In a separate bowl, mix 1/2 cup flour + 1 teaspoon baking soda.

Stir the yogurt/egg mixture into the dry ingredients.  It will be thick!

Use an ice cream scoop to scoop perfect amounts of batter into your heated skillet for the pancakes.  I love my super cool stainless ice cream spring scooper!  Spread them into even rounds.  Add a few fresh blueberries on top of each pancake.

And there they are!  They turn out to be a rather fluffy, full pancake.  They are slightly tart (much like a buttermilk pancake) due to the Greek yogurt, but with added syrup drizzled on top they are pretty darn good.  The bonus:  each pancake is only 91 calories and 2 WW Points + (if you care about that sort of thing).


Here’s a banana version I did using egg whites instead of an egg.  Same consistency.  I really saw no difference in the overall pancake.  If you need the protein, add an egg, and if you want to lower the calorie content- use egg whites instead!

Making Greek Yogurt Pancakes is a fun little experiment for a weekend morning since you can try them out using different flavors/brands of Greek yogurt and different kinds of fresh fruit!  Have fun!

P.S.  Here’s what my family thought of them:  I served these pancakes to my family without telling them that anything was different.  My son ate them, but kept asking what was different about them (while he ate bite after bite after bite).  My husband ate them without asking anything at all.  I’d say, they were a hit!

Greek Yogurt Pancakes

Yield: Five 4-inch pancakes

Prep Time: 10 min

Cook Time: 5 min

Ingredients:

One 5.3-ounce container nonfat Greek Yogurt (any flavor- see *Tips)
1 large egg (or 2 large egg whites)
1/2 cup Gold Medal® All-Purpose Flour
1 teaspoon baking soda
1/2 cup fresh blueberries (or 1/2 large banana)

Directions:

1. Mix yogurt and egg in a medium bowl until blended and smooth. Add flour and baking soda and stir until the dry ingredients are mixed in. The batter will be thick.

2. Preheat a griddle or large pan to medium heat. Spray with nonstick spray. Use an ice cream scoop or 1/4 to 1/3 cup measuring cup to scoop the batter into the pan. Spread each of the batter scoops into an even circle. Dot blueberries or bananas on top of each pancake. Cook for about 3 minutes or until golden brown, then flip and cook the other side for about 2 minutes, until it is golden brown too. Repeat with the remaining batter. Serve with additional fruit and/or syrup.

Tips:

*For blueberry pancakes, use blueberry Greek yogurt and fresh blueberries.
*For banana pancakes, use vanilla or vanilla-honey yogurt and fresh banana.

    If you like using Greek yogurt, I recommend a delicious salad that is also low calorie.
    Green apples, a few sprigs of celery, raisins grapes and all seasoned with Greek yogurt and a little salt.
    It is very tasty to season the pasta salad.

    Love Greek yogurt. I also love whole eggs, but just thought I’d point out that using 2 egg whites versus 1 whole egg will actually give you more protein (since the majority of the protein is in the white, not the yolk), as well as the lower calories, than a whole egg would. :)

    These were pretty good. I used a chobani strawberry yogurt and 1/2 mashed up banana in the mix. Then I cut up some banana and put it in the pancakes. They were amazing. Although i poured them a bit larger which made them harder to cook and flip evenly.

    These are great. I did the banana with a drizzle of honey. Yum. I hate waiting for pancakes to cook, so I put the mix in mini muffin tins, and baked for .. Well until they were cooked. Perfect for the girls to take to school. Will cook again!

    Found you on Pinterest and made these this morning – they were great! I used vanilla honey greek yogurt and added a splash of water to thin the batter to a more pancake-like consistency. After my first batch I decided to add a little vanilla agave nectar to add a little more sweetness as well as a touch of baking powder to help fluff them up a little more; they were delicious and you’d never know they had good stuff in them! Now I don’t feel so bad about my 2-year old eating 8 pancakes every morning!!

    I just made these and they tasted great. However they didn’t rise very much for me. I bake and cook all the time so I didn’t make any mistakes. I will play around with them and see what I can do…once again, tasted great..just not airy and fluffy.

    These were great! I only had plain Greek yogurt so I mashed up a medium sized banana (I don’t think the slices cook as well), added a splash of vanilla and cinnamon. They don’t get as fluffy as regular pancakes, but they browned up and flipped beautifully! Super delicious, thanks for the idea!!

    I tried this recipe but used the Yoplait greek yogurt in the strawberry flavor and used strawberries instead of blueberries since that is what I had on hand. Absolutely loved it!! I am a gastric bypass patient who has to be careful of sugar content, watch my carbs, and be sure to eat lots of protein so I thought I would never get to eat pancakes ever again! This recipe lets me feel like I am eating pancakes just like everyone else!! Of course, I did not use any syrup so next time I will probably add a little bit of Splenda to make the pancakes sweeter. Thanks for helping me eat healthy and feel normal!!

    Just made these this morning….trying to eat healthier, but was craving pancakes…. had vanilla greek yogurt on hand, so I added a little cinnamon and vanilla to the batter.     Just made these. They were delicious!! Used plain greek yogurt from Mediterranean import deli so I added a couple of tablespoons of raw honey and blueberries. I also used two small free range eggs instead of one large. So tender. I will never make the conventional ones again! These are just too good and guilt free!!

    I absolutely LOVE these pancakes. I’ve made them at least twice a week for the past several weeks and they are just amazing. My dad and husband prefer chocolate chip pancakes…so once I’ve made mine, I add chocolate chips to the batter. But they’re delicious either way!

    Tried these, yum yum. Next time I made them with heart healthy bisquick, 1 egg, 1 yogurt, 1T of skim milk powder, quite tasty. I also use sugar free syrup to top them. I am a vertical sleeve patient and must watch the sugar and protein. next time I will try adding some protein powder and see what happens.

    Been on the Weight Watchers program since summer. Breakfast is my problem meal especially on weekends. Just made and ate theses pancakes using my favorite blueberry yogurt.     Lori, I really like your website! Your recipes are not only delicious but easy and fun to follow. I recently made these pancakes for my family while staying in a cozy cottage on vacation. We all loved the pancakes! I used strawberry Voskos Greek yogurt and added sliced bananas as a topper along with slightly sweet real whipped cream (when on vacation we don’t count calories – lol!). We went for a long hike after breakfast and those pancakes sustained us well. Thanks Lori! This recipe is a family keeper.

    Just made these. They taste really good. Any yogurt flavor works perfectly and then adding fruit into them really takes it up to another level.

    The batter is really hard to work with. On the skillet it is a thick blob that has to be pressed down. As a result, the outside cooks faster than the inside. They taste is good, just really hard to work with to get desired results.
    They remind me more of a quick bread/muffin than a pancake. They would also be easier to bake in the oven.

    I just tried these pancakes but I put them in the waffle iron. They were amazing! I think I like them better then regular pancakes. Plus they are way better for you which is a big bonus. Instead of syrup I topped it with some strawberries whip cream and drizzled some honey over the top. :)

    Not sure what I did wrong but these did not work for me at all. We are at 6k feet….maybe there was an altitude issue. Thank you for the recipe. I only had these ingredients in my pantry so it was helpful.

    I should add to the above that I used egg whites (6 T to equal 2 egg whites).Maybe that was the problem? Probably should’ve used less. I am just starting to use egg whites so haven’t quite figured out the ratios.

    These were the fluffiest, yummiest and easiest pancakes I’ve ever made! Well done! I used natural plain yoghurt and sliced some banana on one side before I flipped the pancake and it added just that little bit of sweetness. My 2yr old daughter loves them!
