Blueberry Pie Bars are four delicious layers of a buttery crust, blueberry pie filling, more crust and a sweet glaze drizzled on top. Similar to blueberry pie, they are the perfect dessert for blueberry lovers.

I love making these blueberry pie bars because they are a whole lot easier to make than an homemade blueberry pie with crust to roll out and blueberry pie filling to make and the whole deal. This is a family favorite dessert recipe made with just a few basic ingredients that can be made for parties, potlucks, barbecues and as a dessert to have on hand for the family.

Ingredients Needed:
- The Basics: All purpose flour, white sugar, powdered sugar, eggs, butter, milk and vanilla extract.
- Canned Blueberry Pie Filling: Use any brand you’d like!

How to make Blueberry Pie Bars:
The complete, printable recipe is in the recipe card at the end of this post. Here’s a brief overview.
You will need a 15x10x1-inch baking pan.
- First you’ll make the pie dough. Then you’ll press 3 cups of the dough into the bottom of the pan.
- Spread the pie filling on top of the dough.
- Drop spoonfuls of the remaining pie dough on top of the filling.
- Bake the blueberry pie bars.
- Once cooled, drizzle the glaze on top.

Recipe Tips:
- I have not used homemade blueberry pie filling for this recipe, but if you have a recipe for that and you’d prefer to use homemade, go for it!
- Use other flavors of pie filling! I suggest strawberry, raspberry or apple!
- Add a little lemon zest to the pie dough to give it a little bit of a zippy lemon flavor.
- Blueberry pie bars with be the most soft and fresh when eaten within a couple of days of baking.
- Be sure to let the bars cool completely before trying to cut them into bars.

Make ahead and storage instructions:
You can make these blueberry pie bars a day or two ahead of serving. Keep them stored in an airtight container for up to 5 days in the refrigerator. Keep them stored in the freezer for up to 3 months.

Blueberry Pie Bars
Ingredients
BARS:
- 2 cups granulated white sugar
- 1 cup (2 sticks) salted butter, at room temperature
- ½ teaspoon salt
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all purpose flour
- Two 21-ounce cans blueberry pie filling
GLAZE:
- 1 cup powdered sugar
- ½ teaspoon vanilla extract
- 2 to 3 tablespoons milk
Instructions
PREPARE THE BARS:
- Preheat the oven to 350℉. Spray a 15x10x1-inch baking pan with nonstick spray.
- In a large bowl, use an electric mixer to cream together the sugar, butter and salt until light and fluffy. Mix in the eggs, one at a time, then mix in the vanilla. Gradually add the flour.
- Spread 3 cups of the dough into the prepared baking pan. Spread the pie filling on top. Drop teaspoonfuls of the remaining dough over the filling.
- Bake for 30 to 35 minutes, until golden brown. Cool in the pan on a wire rack.
ADD THE GLAZE:
- In a medium bowl, whisk together the glaze ingredients. Drizzle on top of the baked bars and let it settle into all of the nook and crannies. Let set, and then cut and serve.
